Dark Chocolate Brownies

Just because.... sometimes you just need to keep it simple!


While I love experimenting with recipes, trying to research ways of making desserts interesting with fruits, some sort of a spin off from the usual, there are those times when I (and the family!) craves for the simplest of desserts. We find comfort in the familiar, the tried and tested.

As the very familiar aroma of the dark chocolate brownie baking in the oven engulfs my home in the middle of a Sunday afternoon, everyone is suddenly happy with anticipation. Everyone was exchanging these knowing smiles that the brownies would appear on the table any minute now! That.... is a whole different kind of bliss :)

Amidst all the different recipes I keep trying to feed my family, somewhere, we forgot about this simple dark chocolate brownie and it's amazing power as a mood changer!

These brownies are super light and have walnuts mixed in. While we love the flavours of roasted walnuts with the chocolate, you are free to use any dried fruits of your liking or leave them out completely if you wish. Let's get baking!


INGREDIENTS

  • 175 grams of dark chocolate compound

  • 50 grams of dark chocolate chips or roughly chopped compound

  • 1/2 cup butter

  • 2 eggs

  • 1/2 cup brown sugar

  • 1 cup all purpose flour

  • 2 tsp baking powder

  • (or you can replace the all purpose flour and baking powder with 1 cup self raising flour)

  • 1/2 cup of roughly chopped walnuts (or any other dried fruit of your liking)

METHOD

  1. Preheat your oven to 180 C and line your baking dish with greased parchment paper.

  2. In a heavy bottomed pan placed over other larger pan of simmering over on low heat, melt your butter and 175 grams of dark chocolate together, stirring occasionally.

  3. Once melted, set aside to cool.

  4. In a bowl, whisk together the eggs and sugar.

  5. To this, add the melted chocolate mix and continue to whisk till combined.

  6. Fold in the flour, baking powder, chopped chocolate and the walnuts.

  7. Mix until combined. Do not over mix.

  8. Pour the batter into your prepared pan.

  9. Bake at 180 C for 25 to 30 minutes.

  10. Let it cool before cutting into pieces.
