Easy Orange-Ginger Pie

Another testament to my love for baking with fruits!


There is something about the combination of oranges and ginger. The flavours of baked oranges will surprise you.

You can leave out the ginger powder if not available, the pie will still taste great!


I also realize that the addition of a bit of lemon juice when baking with fruits that have high vitamin C levels helps uplift the base flavour of the main fruit. And this works here wonderfully to bring out the flavour of the oranges.



INGREDIENTS & METHOD

  1. Roll out the required pie dough to 1/4 inch thickness and place it in your pie dish or baking pan. I preferred the baking pan to give my pie more depth for more filling.

  2. Use parchment paper to line the pan and leave an overhang to allow you to pull out the pie gently.

  3. Crimp the edges of the rolled out pie dough with your fingers or a fork and level it out.

  4. Poke the base with a fork and blind bake the base in a preheated oven at 180 C for 12-15 minutes till lightly browned. Set aside to cool.

  5. The baked crust will be very delicate at this time. So make sure you handle it carefully.


INGREDIENTS & METHOD

For the FILLING

  • 1/2 cup orange juice

  • 6 eggs

  • 3/4 cup sugar, preferably powdered

  • 1/4 cup melted butter

  • 1/4 tsp corn starch or all purpose flour

  • 1/4 tsp salt

  • Juice of 1 small lemon

  • 1 tsp ginger powder (more as per taste)

  • A pinch of cinnamon powder

To prepare the FILLING

  1. Keep the fresh orange juice ready.

  2. Lightly beat 6 eggs (yes, 6).

  3. Add sugar and whisk to combine.

  4. Add in the melted butter, orange juice, corn starch or all purpose flour, salt and whisk to combine.

  5. Add juice of 1 small lemon.

  6. Add the ginger powder, a pinch of cinnamon powder if available and whisk.

  7. You may add more ginger powder if you prefer a stronger taste.

  8. Pour into the cooled, pre-baked pie crust and bake for 35-40 minutes at 180 C in a preheated oven, till the centre is set.

  9. Depending on the depth and size of your pie crust, you may be left with some of the filling. You can store it in the fridge in an airtight container. (I have a couple of ideas on what to use this for. Will share soon hopefully!)

  10. Bring out of the oven and cool completely before serving.

  11. Gently pull out of the pan and handle the pie crust with care.
