As simple as it sounds, this one will surprise you with it's gorgeous taste!
It was a relaxed Saturday evening. A lazy Saturday evening with the rains making you want to just sit and not do anything. We knew dinner time was approaching, but really, none of us wanted to get up and spend time in the kitchen. That is when the pie dough I usually keep stocked in my refrigerator came to our rescue!
If you have your pie dough sorted out in advance, you can literally spend just 10 minutes in the kitchen to put this tart together and let it bake for 30 to 35 minutes while you relax. You can find my easy pie dough recipe from one of my earlier posts by clicking here.
What will take you by surprise is when you bite into the tart for the first time! The tang of the tomatoes combined with the buttery, flaky and crisp base of the tart go so well together that you really do not need any other vegetable to make this one better.
So once you have your pie dough ready, you can get this one going any time you want. Let's go!
INGREDIENTS
Pie dough enough for rolling out one tart of approximately 9 inches diameter to about 1/4 inch thickness
3 firm tomatoes, cut into thin slices
A bit of grated cheese
Salt and pepper for seasoning
Dried basil for seasoning, if available
Butter to grease the pan and to brush the tart folds (or egg wash to brush the tart folds)
METHOD
Bring your pie dough out of the freezer and let it thaw for about 5 minutes.
Preheat your oven to 180 C and grease your pie dish or baking pan lined with parchment paper.
Roll out your pie dough into a rough circle about 9 inches in diameter and about 1/4 inch in thickness.
Transfer the rolled out dough gently onto your pie dish.
Poke the base with a fork all over at about 2 inch intervals.
Sprinkle the grated cheese over the base.
Place your tomato slices over the base.
Season with salt, pepper and dried basil.
Gently fold over the extra edges of the base inwards. You need not be very precise or even for this part.
Brush the folded over surface with butter or egg wash to help achieve that crisp, golden brown crust.
Bake the tart at 180 C for 30 to 35 minutes.
Let cool before cutting and serve.
